Easy Peasy this exotic cream soup. I love these mixtures of exotic fruits and aboriginal vegetables. You can really perform magic, having at the same time an healthy dish with a fine touch!
The sweet tangy flavors of mango and the chill and spice of ginger add an exotic savor to this soup.
You do not have to be a master chef of fine cuisine to do it! You only need
1 big mango peeled and chopped
500 g carrots peeled and chopped
125 g yoghurt
3 TS sesame oil
Salt, pepper, thyme, rosemary, basil
1/2 lemon juice or less to taste
1/2 tablespoon of fresh and grated ginger root
snipped fresh dill for garnish
1. Heat oil in a pot and saute carrots 5 minutes. Stir in ginger and continue to saute until soft. Do not brown.
2. Add some water, 2 cups. and simmer 10 to 20 minutes.
3. Add mango. Blend. Add juice, salt, pepper, thyme, rosemary, basil. Add more water if needed.
Garnish. Enjoy 😊
